1 head curly Kale, stems stripped, broken into small pieces and massaged with drizzle of olive oil
1 large red onion, thinly sliced into ¼” round
2 teaspoons olive or coconut oil
⅓ cup walnuts
Instructions
Heat olive or coconut oil in a skillet over medium heat. Add onions. Saute until translucent and then turn heat to low and continue to cook about 7-10 minutes or until lightly brown and caramelized. Remove from heat and set aside.
Place kale and walnuts together in a large salad bowl. Toss with Dressing and top with balsamic onions
